How to make Raffaello cream? Prepare your food. Take natural chocolate with cocoa butter, I make it at home. Choose high-quality oil, without vegetable fats in the composition, that complies with GOST. The same applies to condensed milk — it should contain only milk and sugar. You will learn how to choose a pan by reading the article at the end of the recipe.

Take any fireproof bowl (I used stainless steel, tempered glass will also work). Break white chocolate into it. Put in butter. At the same time, place a saucepan (or ladle) of water on the fire of such a size that the bowl of chocolate can be placed on top of it without it falling into it. There should be enough water so that the bottom of the bowl does not touch it. Wait for the water to boil. Reduce heat to low and place a bowl on top of the pan.

Melt the chocolate and butter, stirring constantly, in a water bath. As soon as they turn into a homogeneous mass, remove the bowl from the pan.

Place coconut flakes into the melted chocolate, then pour in condensed milk. Using a spatula, mix everything until smooth. At this stage the cream turns out liquid, don’t let that scare you. Place it in the refrigerator for 3-4 hours, or better yet overnight — during this time the butter will harden and the cream will become thick. After the cream has stabilized, beat it with a mixer at low speed.

The finished cream is perfect as a dessert; when serving, add berries or nuts to it. You can also layer cake layers with cream or use it to fill eclairs or cupcakes. Raffaello cream with condensed milk turns out thick, but it does not hold its shape and spreads, so it is not suitable for decoration, but it is good as a filling. Bon appetit!
