Carrot 350 g
Sugar 100 g
Eggs 3 pc
Wheat flour 100 g
Baking powder 1 tsp
Vegetable oil 2 tbsp
Salt 0.5 tsp

Cream:

Cream 170 ml
Mascarpone 250 g
Powdered sugar 100 g

How to make carrot roll with mascarpone cheese? Letʼs wash and peel the carrots. Grate on a fine grater.

Beat the eggs with sugar until the volume increases by half. Add vegetable oil and beat for another 1 minute.

Add grated carrots to our mixture. Add flour with baking powder and salt. Mix everything well.

Pour our mixture onto a sheet covered with paper or, like mine, a silicone biscuit mat measuring 35 by 30 cm.

Place in the oven for 15 minutes at 180 degrees.

We take out the finished biscuit and turn it over onto a clean towel. And if you have paper, then remove the paper. And wrap the biscuit in a roll. I had a rug, I just rolled it up with the rug and left it like that until it cooled.
