How to make beef liver pancakes? Prepare all the necessary ingredients. It is better to use fresh beef liver — it will make the pancakes softer and more tender.

Rinse the beef liver thoroughly, remove films and internal ducts and blood clots. Pat the liver dry with a paper towel and cut into medium pieces.

Place beef liver in a blender bowl and blend until smooth. You should get this thick “minced meat”. If you have a small blender, then it is better to grind the liver in parts, since a large volume is difficult to grind and the device may overheat. If you have a kitchen machine, you can grind the entire volume of liver in it. If you don’t have a blender, you can also grind the liver through a meat grinder.

Add milk, egg, flour, salt and pepper to the chopped beef liver.

Beat everything again until smooth. This time the mass will be quite liquid.

Pour the dough into a bowl and leave for 15-20 minutes at room temperature. During this time, the flour will swell and thicken the dough. If after the specified time the dough is still too liquid, sift another 1 tbsp into the dough. l. flour and mix the mixture. You can use semolina instead of flour.

In a frying pan over medium heat (I use mode 5-6 out of 9), heat the vegetable oil, spoon out the liver dough, forming small round pancakes. Fry the liver pancakes for 5-6 minutes on both sides until cooked, periodically adding vegetable oil. The exact frying time depends on the thickness of your pan, the strength of the heat, and the consistency of the liver dough.

The inside of the pancakes should be brownish in color. Blood may be released during the first minutes of roasting. Well-done pancakes should have no blood inside or outside (unless you prefer this level of doneness). Transfer the finished pancakes to a plate and serve. Absolutely any side dish will go with them.
