Recipe instructions

Step 1

Step 1
How to make khachapuri with kefir and cottage cheese in a frying pan? First of all, prepare the dough. Prepare food for him. Take thicker kefir, it will make the dough tastier. Remove it and the egg from the refrigerator in advance; they should warm to room temperature. This will also improve the quality of the test. Take refined, odorless oil.

Step 2

Step 2
How to make the dough? Take a deep bowl and sift flour into it. By doing this you will not only rid it of possible debris, but also saturate it with oxygen, which will make the baked goods more airy.

Step 3

Step 3
Pour warm kefir into another bowl. Beat the egg, pour in the vegetable oil, add soda, salt and sugar. Mix the ingredients well with a fork. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush.

Step 4

Step 4
Start pouring the liquid component into the flour in portions, stirring it with a fork. Once all the liquid has been added, start kneading the dough with your hands. Knead it until homogeneous and smooth. It will practically stop sticking to your hands. Form a bun from the finished dough, cover it with a bag or film and leave it on the table for 15-20 minutes — this will make the dough more elastic and easier to work with.

Step 5

Step 5
While the dough is resting, prepare the filling. Prepare food for her. Take cottage cheese with a high percentage of fat content — the filling will be tastier with it. Choose a high-quality, natural product, without milk fat substitutes. It is not necessary to add spices to the filling, one salt is enough, adjust to your taste. You can also put any greens in it.

Step 6

Step 6
How to make the filling? Place the cottage cheese in a bowl, add salt and season with spices. Mix the ingredients well. The filling is ready.

Step 7

Step 7
Divide the rested dough into 6 equal parts. Roll each one out on a table sprinkled with flour into a round cake. There is no need to make it very thin, 5-7 mm is enough.

Step 8

Step 8
Place a couple of tablespoons of filling in the center of the flatbread.

Step 9

Step 9
Gather the ends of the cake towards the center with a knot. Blind them well.

Step 10

Step 10
Gently roll out the dough with a rolling pin. Be careful not to tear the thin dough. For me, it still broke in some places, which did not affect the taste of the finished khachapuri.

Step 11

Step 11
Heat a frying pan of suitable diameter over medium heat. Place khachapuri on it.

Step 12

Step 12
Fry the khachapuri until golden brown, about 5 minutes on one side, then turn over and fry on the other.

Step 13

Step 13
Immediately brush the top of the finished hot khachapuri with butter. Serve by cutting into segments. Bon appetit!
