How to make Viennese strudel with apples? If you donʼt have ready-made stretch dough, knead it. See the steps in the recipe description for more details. By the way, this dough can be frozen, and to create strudel, defrost for 1 hour at room temperature.

Wash the apples under running water, peel, cut into quarters and cut off the seed pods. Cut into medium-sized cubes, so during the cooking process they will not become mashed.

Combine raisins and chopped walnuts in a bowl, but donʼt turn them into dust! If you buy raisins, rinse them in running water or soak them in hot water for a few minutes, then dry them. If desired, raisins can be kept in cognac or wine.

Melt the butter in a frying pan or cauldron and place the container on the stove over medium heat. Leave a little oil to lubricate the workpiece.

Place the apple slices in the pan.

Turn the heat to medium and sprinkle the apples with granulated sugar. You can add vanilla sugar, vanilla essence or vanillin. If you add vanillin, take it at the tip of the knife, otherwise it may taste bitter in the finished dish.

Rinse the raisins and cover with water for 15-20 minutes, drain in a colander, and let the water drain. This will make it elastic, but do not pour boiling water on it, it may soften. Chop the walnuts with a knife, but not into crumbs. Add raisins and nuts to the apples, carefully mix the whole mass and reduce the heat. Simmer until caramelized, when the apple filling releases juice — it should thicken, mixed with granulated sugar. Add ground cinnamon and stir.

Meanwhile, take the stretch dough and roll it out on a lightly floured work surface. Then gently stretch it with the backs of your hands in different directions, trying not to tear it. Remove any decorations with sharp edges as they may damage the dough.

Sprinkle the edge of the stretch dough with breadcrumbs. Make sure that the crackers used are without the addition of various seasonings — just ground dried bread.

At this point the apple filling will be ready. Many people recommend pouring crackers into the frying pan into the filling, but I recommend doing it differently, pour them onto the dough.

Place the filling on a layer of crackers — it will absorb the juice released during baking. Carefully fold the edges of the dough over the filling and roll it up.
