Take it out of the refrigerator in advance to allow it to come to room temperature — this will be better for the dough. Pour the kefir into a convenient bowl, add sugar and salt, stir and let the mixture brew for 5 minutes.

Sift most of the prepared flour and all the soda into a bowl with the kefir mixture. There is no additional need to extinguish the soda, since it will be extinguished by kefir. Mix the contents with a spoon, add the remaining flour and knead the sticky dough with your hands on the table or in a suitable bowl. To prevent the dough from sticking, grease your hands with vegetable oil. Form the dough into a ball, cover it with cling film and leave to rest for 10 minutes.

Preheat the oven to 180 degrees. Grease a baking dish with vegetable oil, transfer the dough and make 3-4 cuts in it so that it bakes better. Place the bread in the oven for 35-40 minutes. During baking, the pan can be rotated so that the bread browns evenly on all sides.
