Ingredients (4 portions)

DOUGH:

Wheat flour 300 g
Water 160 ml
Sour cream 40 g
Butter 30 g
Dry yeast 1 tsp
Sugar 1 tsp
Salt 1 tsp

FILLING:

Hard cheese 100 g
Green onions 100 g
Cilantro, coriander 2 bunch
Garlic 3 clove

Recipe instructions

Step 1

Step 1
Letʼs start kneading the dough. Mix the melted butter in a deep bowl with sour cream. I used sour cream with a fat content of 20%.

Step 2

Step 2
Add the remaining ingredients: pour in water, add sifted flour, yeast, salt and sugar. We start kneading with a spoon.

Step 3

Step 3
Transfer the dough to a lightly floured work surface. Knead the elastic dough, which should not be tight. Form a ball, wrap loosely in film or cover with a towel and leave to rise for 45 minutes. The kitchen should be warm and all windows should be closed to avoid drafts.

Step 4

Step 4
While the dough is resting, prepare the filling. Chop the onion and cilantro with a knife, grate the cheese on a coarse grater. Instead of cilantro, you can use other herbs if desired, such as parsley.

Step 5

Step 5
Mix all ingredients for filling in a bowl. Add chopped garlic. I used dry garlic, took 1 tablespoon.

Step 6

Step 6
Knead the risen dough for a couple of minutes, and then divide it with a knife into 6 equal pieces. To do this, you can roll a sausage out of it and divide it, or you can immediately divide the ball into 6 sections.

Step 7

Step 7
Take 2 pieces and roll each of them into a thin cake with a rolling pin. I got flat cakes with a diameter of 20 cm (about the size of a frying pan).

Step 8

Step 8
Place the filling on one flatbread, leaving 2 cm around the edges.

Step 9

Step 9
Cover with the second flatbread and seal the edges tightly. Make 2 more cakes from the remaining 4 pieces.

Step 10

Step 10
Heat the frying pan without greasing it with anything. Lay out the flatbread. Fry until brown spots over medium heat.

Step 11

Step 11
Turn over and bake until done.

Step 12

Step 12
The finished cakes can be greased with butter while still hot.
