Mushroom & Cheese Stuffed Zucchini Pasties

You can use zucchini to make delicious zucchini pancakes. Depending on the filling, this dish can be either a light dinner or a hearty second for lunch. Usually this dish is not allowed to cool; with sour cream or light sauce, the zucchini pasties fly away as soon as they come out of the frying pan.

Ingredients (8 portions)

For dough:

Young zucchini 500 g
Milk 1 cup
Wheat flour 150 g
Chicken eggs 2 pc
Dry spices to taste
Dill to taste
Parsley to taste

For filling:

Dry spices to taste
Oyster mushrooms pc
Hard cheese 50 g
Green onions to taste
Vegetable oil 3 tbsp

Prepare all necessary products. Cut the mushrooms into small cubes and fry in a dry frying pan until cooked and the moisture has evaporated. Transfer the mushrooms to a bowl and let them cool.

Grate the cheese on a coarse grater and add to the cooled mushrooms.

Finely chop the onion and herbs, add to the mushrooms and cheese, mix.

Wash the zucchini, remove the stems, cut into small pieces.

Transfer to a blender and grind.

Transfer the mixture to a bowl, add chicken eggs, flour, chopped herbs, spices, mix.

Pour milk into the mixture in portions. Grind with an immersion blender until more homogeneous.

Pour in a little vegetable oil and stir.

Add mushrooms with cheese, herbs and onions. Mix all.

Grease the frying pan with vegetable oil with a brush, heat it well, pour in a portion of the zucchini dough, smooth it out and let it set a little. Place the filling on half of the pancake.

Cover it with the other half of the pancake. Cover with a lid and cook for 1-2 minutes

Then turn the cheburek over, cover again and cook for another 1-2 minutes.

Transfer the finished cheburek to a plate.
