Quick Stovetop Cheese Flatbread (No Yeast, Kefir-Based)

Basic recipe, but can be prepared in different ways. The same as making dough, but you need to cook it in a frying pan. When frying, add very little oil; if the coating of the pan allows it, you can do without it. The taste is cheesy, but you can add herbs and spices as you wish. They differ greatly from those prepared in the oven; such flatbreads are more like pancakes and not like baked goods, this must be taken into account so as not to be deceived in the expectation of taste. Itʼs quick and generally easy to prepare.

Ingredients (6 portions)

Dough:

Wheat flour 320 g
Kefir 200 ml
Eggs 1 pc
Salt 0.5 tsp
Sugar 1 tsp
Baking powder 1 tsp
Vegetable oil 1 tbsp

Filling:

Hard cheese 200 g

Prepare food. Dairy products can be taken straight from the refrigerator.

Grate the cheese on a coarse grater. You can use either semi-hard, hard or semi-soft. It is important that it is not a cheese product and melts well. Fat content is better from 50%

Sift flour and baking powder into a mixing bowl and mix.

In a separate bowl, whisk the egg with sugar and salt.

Pour the egg into the flour, then slightly warmed kefir, mix with a whisk or fork. /I heat kefir in the microwave for 30 seconds/

Then pour in 1 tbsp. vegetable oil and knead the dough with your hand; it will be slightly sticky.

Dust the counter and dough with flour and form into a ball. Do not add too much flour so as not to clog the dough. If it gets sticky, wash your hands and dry them, this usually helps to avoid over-flouring.

Roll out the dough into a flat cake 0.5-0.6 cm thick. Distribute grated cheese evenly on top.

Wrap it in a tight roll, roll it a little on the table, evening out the thickness. Then cut into pieces 2 cm wide. Dip each piece cut side into flour /both sides/, flatten into a flat cake and roll out to the desired thickness, but not thinner than 0.5 cm. It turns out 15-17 pieces.

Pour a little oil into a heated frying pan, heat it over medium heat and fry the flatbreads on both sides until golden brown. I didn’t cover it with a lid, they fry quickly enough, don’t move away.

When ready, place on a paper towel, then in stacks on top of each other. Delicious both hot and cold with any drink.
