Fluffy 5-Minute Cottage Cheese Buns

Tender, soft and fluffy buns! “Buns in 5 minutes” sounds rather dubious, but nevertheless it is plausible. Literally, in 5 minutes you can prepare a wonderful curd dough without yeast in the composition, from which you get airy and fluffy buns.

Cottage cheese 250 g
Wheat flour 200 g
Chicken eggs 2 pc
Sugar 70 g
Salt 2 g
Vanillin 1 g
Baking powder 10 g
Vegetable oil 2 tbsp

To grease the buns:

Sour cream 2 tbsp
Sugar 20 g

How to bake buns like fluff in 5 minutes? Letʼs prepare the ingredients for the cottage cheese buns. The dough for buns is prepared very quickly, it is not necessary to stand it and is even harmful (they may not rise), so you can immediately turn on the oven (top/bottom) and preheat it to 180 degrees. Place natural cottage cheese of any fat content in a bowl. Fat content does not affect the quality and taste of the buns; even low-fat cottage cheese produces fluffy and soft buns.

Beat chicken eggs into the cottage cheese and add sugar, a pinch of salt and a pinch of vanillin. Mix the ingredients thoroughly with a hand whisk or mixer, then add vegetable oil and mix until the mixture is homogeneous in consistency. It is better to first rub the cottage cheese through a fine sieve or beat it with a blender to make it more airy.

Add sifted wheat flour combined with baking powder in parts. Sift a small part of the flour without baking powder to be able to regulate the density of the dough. If desired, factory-made baking powder can be replaced with homemade baking powder (mix 3 tsp fine citric acid (or crushed in a blender), 5 tsp soda and 12 tsp flour — mix everything and store closed in a jar, take according to recipe as a baking powder).

Add flour in batches, first mix the dough with a spoon or mixer.

When the dough becomes so viscous that it is difficult to mix with a spoon or blender, place it on a floured work surface and continue kneading with your hands. But you must wet your hands with cold water so that the dough does not stick to your palms. The bun dough should be soft and elastic, slightly sticky and not too dense — do not overfill it with flour!

Flour may be required exactly according to the recipe, or less, or a little more, but the dough should be soft. Line a baking sheet or baking pan with parchment and grease with oil. Using your hands, divide the dough into 7 equal-sized pieces. Roll them into balls with wet hands and place them on a baking sheet. If the balls don’t turn out even and round, that’s okay; they will straighten out during baking. Spread sour cream on top of the buns and sprinkle with sugar.

Place the baking sheet with the buns in a preheated oven at 180C for 20 minutes. But the baking time may vary depending on the operation of your oven. The buns should be slightly browned on top. Remove the buns from the oven, remove from the baking sheet, let cool slightly and serve with tea, coffee, cocoa or milk.
