Coconut Strawberry Delight Cake

A simple and delicious cupcake for strawberry season. In the summer, when strawberries ripen, baked goods with this berry always appear on the table. Basic:

Salt 0.2 tsp
Sugar 110 g
Wheat flour 180 g
Milk 150 ml
Eggs 2 pc
Vegetable oil (odorless (plus 1 tsp for greasing the mold) 60 ml
Baking powder 1.5 tsp
Powdered sugar (For decoration) 1 tbsp
Soda 0.2 tsp
Starch 1 tsp
coconut flakes 30 g
Strawberry 160 g
Melissa (or mint — for decoration) to taste

To prepare a cupcake with coconut and strawberries in milk, you will need the following ingredients: eggs, sugar, milk, coconut flakes, vegetable oil, soda, salt, baking powder, wheat flour, starch, strawberries, powdered sugar, lemon balm or mint leaves.

Mix flour with salt, soda, baking powder and sift.

Add sugar and coconut flakes and mix.

In a separate container, beat the eggs with a whisk until smooth.

Add room temperature milk and stir.

Add vegetable oil and mix.

Pour the mixture of dry ingredients into the liquid mixture.

Mix with a whisk until the lumps disappear. Knead a homogeneous, slightly thick dough.

Line a cake pan (mine is 18 cm in diameter) with parchment and grease the bottom and sides of the pan with vegetable oil. Pour the dough into the mold.

Wash the strawberries thoroughly, dry them, and remove the sepals. We cut each berry into two parts, if very large, then into four.

Sprinkle the strawberries with starch through a strainer to prevent them from releasing too much juice during baking. This way the cake will bake better.

Lightly press the berries into the dough.

Bake the cake in an oven preheated to 180 degrees for about 35 minutes. We check the readiness with a wooden stick; if it comes out dry, it means the baked goods are ready. If the top of the cake is browned, but the inside is not completely baked, cover the top with foil.

Cool the finished cake completely and remove from the pan. Sprinkle the cake with powdered sugar, decorate with lemon balm or mint and serve. Enjoy your tea!
