Recipe instructions

Step 1

Step 1
How to make sour cream with cherries? Prepare all the necessary ingredients. First, soak the required amount of gelatin in cold water. Stir it so that there are no lumps and leave for 20 minutes for the gelatin to swell.

Step 2

Step 2
Cherries can be used either fresh or frozen. Wash fresh cherries and remove the pits. Frozen — remove from the freezer and defrost. There is no need to drain the liquid.

Step 3

Step 3
Place the cherries along with the extracted juice in a deep bowl so as not to stain the table. Lightly chop the cherries with an immersion blender. It is not necessary to make it homogeneous, just leave small cherry pieces. Add sugar to the chopped cherries and heat until hot.

Step 4

Step 4
Then add the swollen gelatin to the hot cherry and stir until it dissolves. Cover the hot cherry-gelatin mass with cling film and leave to cool to room temperature.

Step 5

Step 5
When the cherry mass has cooled, beat the chilled sour cream with powdered sugar. Use high fat sour cream. Otherwise, it simply won’t fluff up and will remain in a liquid state. Start beating at low speed so that the sugar initially dissolves in the sour cream. Then turn the mixer on at full power and beat until you get a fluffy, fluffy cream. At the beginning of whipping, the sour cream will become liquid, but then it will begin to gain volume and thicken.

Step 6

Step 6
Add a few spoons of whipped sour cream to the cherry mixture. Mix with a whisk. Then add more and stir again. With such constant intervention, the mass will remain fluffy.

Step 7

Step 7
The sour cream for the cherry cake is ready. You can also serve it as an independent dessert; to do this, pour it into bowls and put it in the refrigerator for 1-2 hours so that it hardens.

Step 8

Step 8
Before serving, decorate to your liking, for example with melted chocolate. Enjoy your meal!
