Gluten-Free Almond Delight

For the cakes:

Sugar 120 g
Almond 250 g
Egg whites 4 pc

For cream:

Sugar 100 g
Butter 200 g
Milk 240 ml
Corn starch 30 g
Egg yolks 4 pc

For decoration:

Almond petals 30 g

How to make almond cake? Prepare your food. You can lightly toast the almonds before cooking. Instead of sugar for the cakes, you can use powdered sugar. If your starch is potato starch, take half the norm. Remove the butter from the refrigerator in advance to soften it. Wash the eggs with a brush and dry.

Grind almonds to flour. I used a food processor, you can do this with a coffee grinder. It is not necessary to grind it to powder; let the flour be coarsely ground, so the nuts will taste better.

Divide the eggs into whites and yolks. Do this very carefully so that not a drop of yolk gets into the whites, otherwise they may not beat. The container in which the egg whites will be beaten must be clean and dry.

Beat the egg whites, gradually adding sugar, until stiff peaks form. It will take you about 10 minutes.

Gently fold in the beaten egg whites and almond flour. A silicone spatula is best suited for this purpose; it does not destroy the protein structure when mixing. Movements should be from bottom to top.

On parchment paper, draw two circles of the desired diameter with a pencil. I circled the large plate. Turn the sheet over and place the dough on it, forming the cake according to the drawn template.

From the specified quantity of products two cakes are obtained.

Bake the cakes at 175 degrees for about 20 minutes. Focus on your oven. It’s better to place two cake layers at once, bake them for the first 5-10 minutes, then swap the cake layers and bake them for another 5-10 minutes. The finished cake should be slightly browned. Cool the cakes completely and only then carefully remove the paper from them.

Start preparing the cream. Mix milk, sugar, starch and egg yolks in a ladle. Place the ladle on low heat and cook its contents with constant stirring until thickened. The dishes should have a thick bottom so that the mixture does not burn. If you donʼt have one, use a water bath. Cool the custard base completely.

Beat the butter with a mixer, adding the custard base one spoon at a time until it becomes a smooth, fluffy cream.

Spread the cream over each cake layer, placing them on top of each other. Also coat the sides and top of the cake.

Decorate the top and sides of the cake with almond petals. Cool the finished cake in the refrigerator for three hours.
