Recipe instructions

Step 1

Step 1
How to make zucchini pancakes in a frying pan? Prepare your food. The most delicious pancakes are made from young zucchini. But if yours are not very young, it’s not scary, everything will work out anyway!

Step 2

Step 2
Prepare the zucchini. First, you need to wash them well and wipe them dry. Since I have young zucchini, I simply cut off the ends and cut out the dark spots on the skin. If the zucchini is old, then it is necessary to peel it from the thick skin and remove the seeds from it.

Step 3

Step 3
Grate the zucchini on a coarse grater. Squeeze out the resulting mass directly with your hands. If any juice comes out, drain it. I came across some dry zucchini, there was no juice.

Step 4

Step 4
Add the egg and salt to the zucchini and stir. Start adding flour in portions, stirring it immediately so that flour lumps do not form. You may need a little less or more flour, depending on what kind of dough you make. If the zucchini is very watery, add more. Read about the properties of flour in the article below the steps.

Step 5

Step 5
Heat a frying pan and pour oil into it. My frying pan is non-stick, I just grease it with a small amount. Lay out the dough in small portions. There is no need to make the pancakes very thick; they may not bake through. How to choose a frying pan and a little for frying, read the separate articles at the end of this recipe.

Step 6

Step 6
Fry on one side until golden brown, turn over. Fry on the other side until done. If the pancakes are difficult to turn over, add more flour to the dough. I recommend frying a couple of pancakes as a test to adjust the consistency of the dough.

Step 7

Step 7
Serve the zucchini pancakes immediately with sour cream or yogurt. Bon appetit!
