Recipe instructions

Step 1

Step 1
How to make homemade classic tiramisu? Prepare your food. Mascarpone and eggs should be at room temperature; remove them from the refrigerator in advance. The eggs must be very fresh. Start cooking with cream. How to make mascarpone cream? Break the eggs and separate the whites from the yolks. Do this as carefully as possible so that not a drop of yolk gets into the whites, otherwise they may not beat well. Place the yolks in a bowl and add sugar.

Step 2

Step 2
Beat the yolks and sugar with a mixer or whisk into a light creamy mass.

Step 3

Step 3
Add the mascarpone and beat with a mixer on low speed or with a whisk until smooth.

Step 4

Step 4
In a separate bowl, beat the egg whites with a pinch of salt at high speed until stiff. Check readiness, turn the bowl over, the finished mass should not flow out of the bowl.

Step 5

Step 5
Add the beaten whites to the bowl with the beaten yolks and mascarpone. Add vanilla extract and stir with a spatula until smooth and creamy. Stir the cream with gentle movements from bottom to top, as if burying the whites, so as not to damage their airy structure.

Step 6

Step 6
Start with the base of the dessert, which is the cookies. Brew and cool strong espresso in advance. Add cognac to the cooled coffee. Dip the cookies in the coffee. Do not keep cookies in coffee for a long time, no more than 5 seconds, they can become very soft!

Step 7

Step 7
Place cookies in a high-sided tray. You can also prepare dessert in portioned dishes — bowls.

Step 8

Step 8
Place cream on top.

Step 9

Step 9
Place the cookies again and cover with cream on top.

Step 10

Step 10
Sprinkle cocoa powder on top through a sieve. Place the dessert in the refrigerator for 3 hours. Serve tiramisu by cutting it into portions and garnish with berries and a sprig of mint to taste. Bon appetit!
