Meat and Zucchini Summer Bake

Basic:

Salt to taste

Hard cheese (preferably spicier) 100 g
Tomato paste 100 g
Zucchini (average) 2 pc
Bulb onions 1 pc
Dry spices (for your taste, I took oregano) to taste
Minced meat (raw take 600 g) 400 g
Chicken eggs 2 pc

How to make a casserole of grated zucchini with minced meat in the oven? Products for making casseroles. Zucchini and onions are peeled and washed. Take any minced meat. I have chicken and beef. I wanted to get a more dietary option, so I took minced meat from pre-boiled meat and minced it in a meat grinder. You can take raw minced meat and when you fry the onions in a pan, fry the meat until it loses its pink color.

Grate the zucchini. So these vegetables are juicy, they give a lot of juice, they need to be squeezed out a little, and the excess juice should be drained.

Beat the eggs into the zucchini and mix thoroughly.

Grate the cheese and add 3/4 of it to the zucchini. Stir again.

Preheat the oven to 200 degrees. Grease a baking dish with oil.

Spread the zucchini mixture onto the bottom of the pan, adding salt.

Finely chop the onion. Heat a frying pan, add oil and fry the onion for a couple of minutes.

Place the minced meat in the same frying pan and, if it is raw, fry until the pink color disappears. Drain all the fat from the minced meat. Add tomato paste, salt, spices and stir. I simply mixed ready-made minced boiled meat with lightly fried onions and all other ingredients.

Place the minced meat in a baking dish on top of the zucchini mixture.

Sprinkle the remaining cheese over the top of the minced meat. Bake for 20 minutes in the preheated oven until done.

This is what the finished casserole looks like! It is very tasty hot, not bad when cooled down, but its taste is not so bright, so I suggest choosing a sharper cheese for it and you can add 2 times more of it. You can also “play around” with the amount of spices.
