Recipe instructions

Step 1

Step 1
How to make a cookie roll without baking? Prepare your food. Remove the butter from the refrigerator in advance and let it sit at room temperature until it becomes soft. Choose high-quality, natural oil, without vegetable fats. You can use any shortbread cookies. Take soft and fatty cottage cheese. I use homemade cottage cheese.

Step 2

Step 2
Place the cookies in the bowl of a blender or chopper and turn them into crumbs. You can chop it not very carefully so that tangible pieces remain, or you can chop it very finely. If you donʼt have a blender, beat the cookies with a rolling pin and place them in a tight bag. Then pour the crumbs into a deep bowl so that it is convenient to knead everything. The bowl can be taken from any material — glass, plastic or metal.

Step 3

Step 3
Add cocoa and milk to the bowl with the ground cookies. Natural cocoa is also suitable; do not take a drink like Nesquik.

Step 4

Step 4
Mix the ingredients thoroughly with your hands. The mass turns out to be quite thick. If it turns out too dry, then pour in a little more milk; if it is too liquid, add cookies.

Step 5

Step 5
Then cover the board with cling film and place the chocolate lump on it. Distribute it over the surface of the film, forming a rectangle.

Step 6

Step 6
To prepare the curd filling, combine cottage cheese, sugar, vanillin and butter. Mix everything. If your cottage cheese is too grainy, punch it with a blender or rub it through a sieve, then the filling will be more tender and homogeneous.

Step 7

Step 7
Spread the curd filling over the entire surface of the cookies.

Step 8

Step 8
If desired, you can add a little of any seedless jam, jam, berries or boiled condensed milk to the filling. Lay it out in a small strip in the middle of the rectangle. But you can cook without it.

Step 9

Step 9
Using film, roll the layer into a tight roll. Place the roll in the refrigerator for several hours or in the freezer for 1 hour.

Step 10

Step 10
After hardening, the roll can be cut with a knife. Place it on a plate and serve. Bon appetit!
