How to bake jellied pie with berries and sour cream? Prepare all the necessary ingredients.

Sort the berries, wash and be sure to dry thoroughly. Remove the tails and sepals. You can take absolutely any berries, depending on the season. I took wild strawberries, wild strawberries, strawberries, white currants and gooseberries. The berries should be firm, without signs of spoilage and not watery (otherwise the filling may remain liquid due to the large amount of juice).

Place the butter in a bowl, melt and cool. This can be done on the stove or in the microwave. Just be sure to cover the bowl with a lid; if you melt it in the microwave, it may explode and fly all over the surface.

Add sugar to the melted butter and stir. You can use absolutely any sugar, and cane sugar will also give the finished pie a light caramel aroma.

Add salt and stir again. Use coarse salt, as finely ground salt is very easy to oversalt.

Wash the egg in warm water and soda, as there may be harmful bacteria on its surface. Break the egg into a cup to make sure it is fresh and only then add it to the butter mixture. Mix everything well until smooth.

Sift the flour through a fine sieve into a bowl with the buttered egg mixture. This will saturate the flour with oxygen and get rid of debris, if there was any. Since this dough does not contain baking powder, it is best to use premium flour or special flour for confectionery products.

Quickly knead into a soft, tender dough. Do not knead it for a long time, as shortbread dough becomes tough from prolonged kneading. Place the dough in a bag and refrigerate for 15-20 minutes to allow it to mature.

Make sour cream filling. To do this, mix sour cream, egg and sugar until smooth. Be sure to use natural and thick sour cream, otherwise you risk getting a liquid filling.

Remove the dough from the refrigerator and place in a springform pan with a diameter of 20-22 centimeters. Spread the dough in an even layer over the bottom and sides of the pan. Turn on the oven to preheat to 180 degrees.

Pour the sour cream mixture into the mold with the dough and smooth the top.

Place the berries in a random order on top. There is no need to drown the berries; they will sink under their own weight.
