Healthy Apple Cobbler with Buckwheat Flour

My perfect delicious and healthy fall/winter dessert. An excellent combination of apples, sweet spices of cinnamon and ginger — it is always warm, cozy and a feeling of celebration. The rich, bright taste of coconut sugar and whole green buckwheat flour are the perfect base for dessert.

Ingredients (6 portions)

Basic:

Apples 2 pc
Cinnamon 0.25 tsp
Ginger 0.5 tsp
Baking powder 1 tsp
Brown sugar (I use coconut sugar, it makes the taste brighter and richer) 100 g
Buckwheat flour 120 g
Soy milk 250 ml
Coconut oil 55 g

Recipe instructions

Step 1

Step 1
Preheat the oven to 175C. Place solid coconut oil in a mold (the ideal size for baking this dessert is 15x25 cm, mine is about 22x30 cm) and put it in the oven to melt it and warm up the mold.

Step 2

Step 2
While the pan is heating, in a small bowl, combine the diced apples, cinnamon and ginger. The size of the pieces depends on your preference, but try not to cut too finely.

Step 3

Step 3
In a large bowl, mix buckwheat flour, coconut sugar, baking powder

Step 4

Step 4
Add soy milk and mix everything well

Step 5

Step 5
Remove the preheated pan with melted butter from the oven. Pour the dough into the pan, mixing it well in a bowl before doing so.

Step 6

Step 6
DO NOT MIX THE DOUGH WITH BUTTER IN THE FORM — this is important for an excellent result.

Step 7

Step 7
Distribute the apples evenly on top and again: DO NOT MIX ;) you already know this is important

Step 8

Step 8
Send the form back to the oven preheated to 175C for 40 minutes. Monitor readiness, you may need less or a little more time, ovens vary. The dough should turn golden and hold its shape well.

Step 9

Step 9
You can serve the dessert with ice cream, cream, and for the most ardent sweet tooth, you can pour your favorite syrup on top. And of course, serve simply as a separate dessert. Bon appetit ;)
