We take the finished flatbread out of the oven, but do not cut it, it must be allowed to cool, and the cooling process should not be abrupt, the sauce must cool and thicken, otherwise it will simply pour out. For this purpose, I leave the baked goods in the pan, cover with paper and a towel. So she rests with me for about 30 minutes. Then I remove it from the pan and it cools as usual.
