Bright, summery, fragrant, festive, very tasty! Pie with strawberries and cottage cheese is an open tart made of shortcrust pastry with aromatic curd filling and bright confiture of fresh berries. The pie will take some work, but the results are worth it!

Dough:

Wheat flour 250 g
Butter 120 g
Egg yolks 2 pc
Sugar 2 tbsp
Water 2 tbsp
Salt 1 g

Filling:

Cottage cheese 400 g
Strawberry 100 g
Sugar 70 g
Butter 50 g
Corn starch 15 g
Eggs 2 pc
Lemons 1 pc
Vanilla sugar 1 tbsp

Confiture:

Strawberry 150 g
Sugar 75 g
Corn starch 15 g

Decoration:

Strawberry 10 g

How to make a pie with strawberries and cottage cheese? To begin, prepare the necessary ingredients according to the list. Take the highest grade flour.

In a blender bowl, combine flour, diced cold butter, sugar and salt. Beat everything into fine crumbs.

Add the yolks and ice water to the crumbs.

Quickly knead into a homogeneous shortbread dough. As soon as the dough begins to pull away from the sides of the bowl and stops sticking to your hands, it is ready.

Wrap the dough in film or a bag and put it in the refrigerator for 30 minutes.

Roll out the chilled shortbread dough on a sheet of parchment into a thin circle with a diameter slightly larger than the diameter of the baking pan.

Transfer the dough to a greased and floured baking dish (Ø 22-24 cm) and make sides.

Place paper on the dough, pour dry weight on top (for me itʼs beans). Bake the dough in an oven preheated to 180ºC for 20-25 minutes.

While the dough is baking, prepare the filling. Melt the butter first and cool it. Cottage cheese is suitable for any fat content.

Wash the strawberries, dry and cut into small pieces.

Divide the eggs into yolks and whites. It is important that when separating, not a drop of yolk gets into the white, otherwise it will not foam. Place the whites in the refrigerator.

Place cottage cheese, melted butter, yolks, starch, sugar, vanilla sugar and lemon zest into a blender bowl. Beat until smooth. You should get a dense, homogeneous viscous mass.

Beat the whites separately until they form a stable, fluffy foam.

Gently fold the whipped egg whites into the curd filling.

Add chopped strawberries and mix gently.

Place the curd filling on the dough and smooth it out. Depending on the shape you choose and the height of the sides, you may have some dough and/or curd filling left over. If there is any filling left, you can put it in a small pan and bake. Get a cottage cheese casserole with strawberries.

Return the pie to the oven for about 30 minutes more.

Now prepare the jam. It can be prepared the night before and warmed slightly before applying to the pie. You can use fresh or frozen strawberries for jam.

Place strawberries and sugar in a blender bowl. Blend until pureed.

Pour out some of the puree and dissolve the starch in it.

Pour the rest of the puree into a saucepan, place on low heat and bring to a boil. When the mixture begins to boil, pour in the puree with starch and cook the confiture, stirring, until thickened.

While the tart is still warm, evenly cover the top with strawberry jam. Cool tart at room temperature. Then put it in the refrigerator for 6-8 hours.
