Recipe instructions

Step 1

Step 1
How to make yeast pies with ham and cheese in the oven? Prepare the necessary ingredients for the dough. Before purchasing yeast, read the instructions. Since there is fast-acting yeast that mixes with flour immediately. In the same recipe you will need yeast, which is diluted with liquid — in this case, milk. Take the highest grade flour. Read about the types of yeast and how to replace them in recipes in the article below the steps.

Step 2

Step 2
Dissolve sugar, salt and yeast in warm milk heated to a temperature of 37-40°C. Mix everything. Leave in a warm place for 15 minutes. There should be a foam cap on the surface. This means that the yeast is active and you can knead the dough further. If this does not happen, baking will not work.

Step 3

Step 3
Add mayonnaise and whisk until smooth.

Step 4

Step 4
Add sifted flour in parts and knead into a soft, homogeneous dough, adding a little more flour if necessary. You can read more about flour and its properties in a separate article, link at the end of the recipe.

Step 5

Step 5
Please note that you may need more or less flour. The dough itself will take as much as it needs. If the dough is still sticky and you need even more flour than the recipe calls for, it is better not to overfill the dough with flour, otherwise the finished dough will be too dense and tasteless. It is better to sprinkle flour on your rolling pin and table when rolling.

Step 6

Step 6
Place the dough in a bowl, cover with a towel and leave in a warm place to rise for 1 hour.

Step 7

Step 7
Now prepare the ingredients for the filling. To lubricate the workpieces, take the yolk. Turn the oven on 180 degrees.

Step 8

Step 8
Cut the ham into slices 0.5-1 cm thick.

Step 9

Step 9
Grate the cheese on a coarse grater. Any cheese is suitable, from ordinary Russian to suluguni. The main thing is that the cheese is tasty, without dyes or milk fat substitutes, and melts well.

Step 10

Step 10
In a bowl, combine grated cheese, egg, salt and pepper and mix.

Step 11

Step 11
Punch down the dough and divide into two equal parts. Roll out the first part of the dough into a thin rectangular layer. Using a glass (it should be larger in diameter than the ham circles), lightly mark circles on the dough. Place a slice of ham in the center of the marked circles. Place a mound of cheese filling on top of the ham.

Step 12

Step 12
Roll out the second layer of dough into a larger rectangle and cover the filling with it.

Step 13

Step 13
Using the same glass, cut out the blanks. Roll out the dough scraps again and make blanks.

Step 14

Step 14
Place the pieces on a baking sheet lined with parchment and brush with yolk. Read the article at the end of the recipe for other ways to grease baked goods. Bake in a preheated oven at 180℃ for about 25 minutes until golden brown on the “top+bottom” mode without convection. You can learn about the operating features of ovens, as well as the features of different types of parchment, by reading a separate article, the link is at the end of the recipe.

Step 15

Step 15
Serve the finished ham pies immediately. Bon appetit!
