How to make a fluffy charlotte with cherries? Very simple, no more difficult than with apples. To begin, prepare the necessary ingredients according to the list. Take the highest grade flour, select large eggs. You can replace vanilla sugar with a pinch of vanillin.

Wash the cherries, dry them, remove the pits and place in a colander to drain excess juice. If the cherries are frozen, defrost them first and drain the juice.

Sift the flour together with 30 g of starch into a bowl. Add baking powder and mix everything with a spoon.

Beat the eggs with a mixer until fluffy and light foam, gradually adding sugar and vanilla sugar. The mass should increase in volume by 3-4 times and lighten.

Pour the sifted flour mixture into the dough in parts and mix gently with a spatula, being careful not to settle the mixture. It may take you more or less flour than it did for me. Focus on the consistency of the dough.

The consistency of the dough should be liquid. Instead of mixing with a spatula, you can beat the dough with a mixer at low speed and for a short time.

Add the remaining cornstarch to the prepared cherries and stir until the berries are evenly coated. Starch can be replaced with flour.

Place the cherries in starch in a parchment-lined baking dish (Ø 18 cm). Top the berries with biscuit dough. You can simply stir the berries into the dough and pour everything into the mold.

Bake the pie in an oven preheated to 170°C for about 40-55 minutes. The exact time depends on your oven. Do not open the oven door during baking to prevent the biscuit from settling.
