Oven-Baked Apricot Pies

Even the neighbors will come running to the heady aroma of these pies! Come in too! Ah, summer is a wonderful time for ripe berries and fruits! And I especially love apricots — fortunately, we had a great harvest of them this year! Apricot pies are simply delicious — sweet and sour, aromatic, fluffy! Fairy tale!

Recipe instructions

Step 1

Step 1
Here are the ingredients needed for the dough

Step 2

Step 2
Beat egg with sugar

Step 3

Step 3
Add salt and beat a little more

Step 4

Step 4
Pour in warm milk. It is better to take milk that is not very fatty, 1.5% will be enough. If the milk is homemade, it is better to dilute it with water 50:50

Step 5

Step 5
Mix dry yeast with flour

Step 6

Step 6
Now combine the dry and liquid ingredients and mix

Step 7

Step 7
Add the oil last

Step 8

Step 8
Using a spoon and then using your hands, knead the dough. You need to knead for 10-15 minutes, as they say, “until it stops sticking to your hands.” I usually trust this process to a bread maker, it helps me a lot with this!

Step 9

Step 9
The dough is well kneaded, beautiful, even, smooth and elastic.

Step 10

Step 10
Cover the dough with a towel and leave it alone in a warm place for 1 hour.

Step 11

Step 11
And these are the ingredients for the filling. The recipe is not strict — you may need more or less sugar or apricot, depending on how sweet you like your pies and how many apricots will fit in 1 pie)

Step 12

Step 12
We just need to wash the apricots and remove the seeds, this process is short, so it’s better to do this when the dough is almost ready

Step 13

Step 13
After an hour our dough had risen very well.

Step 14

Step 14
The photo shows how airy and porous it is, even though we didn’t use dough, but mixed dry yeast directly with flour — after all, our yeast is fast-acting dry

Step 15

Step 15
Now divide the dough into small balls. I got 25 pieces.

Step 16

Step 16
Thatʼs all — now all that remains is to make our pies

Step 17

Step 17
We knead each piece with our hands into a flat cake, put a few apricots and 1-2 teaspoons. l. Sahara

Step 18

Step 18
We seal the edges well and get a beautiful pie! We place it with the seam up so that the filling does not leak out.

Step 19

Step 19
Place the pies on baking parchment greased with a little vegetable oil

Step 20

Step 20
To grease the pies, lightly beat the egg.

Step 21

Step 21
Brush the pies with egg and they will take on a beautiful shiny golden appearance when baked.

Step 22

Step 22
Place in the oven to prove for about 15 minutes at minimum temperature. During this time the pies will rise well

Step 23

Step 23
Then bake at 180 degrees until golden brown. Baking time depends on your oven. Today I have an electric oven top + bottom and baking took me only 25 minutes

Step 24

Step 24
Lightly sprinkle the finished pies with some water, cover with a towel and let cool. The aroma is simply magnificent!

Step 25

Step 25
Enjoy your tea!
