Ingredients (8 portions)

Basic:

Sugar (the quantity can be slightly increased or decreased, depending on the sweetness of the jam) 90 g
Wheat flour (or a little more, depending on the thickness of the jam) 260 g
Butter 50 g
Eggs 2 pc
Soda (no slide) 1 tsp
Jam (Any to taste, but preferably thick. I used plum) 220 g
Kefir 200 g
Ground cinnamon (optional) 1 tsp

How to bake kefir gingerbread with jam in the oven? Prepare all the necessary ingredients.

Place the butter and kefir in the microwave. You can do it together or separately (depend on your microwave), the butter needs to be melted, and the kefir needs to be brought to room temperature. Set both butter and kefir aside for now.

Break eggs into a bowl and add sugar.

Beat them until fluffy with a whisk.

Add kefir, jam (by the way, if it is very thick, you can also warm it up a little to make it a little thinner), as well as melted butter.

Mix everything thoroughly with a whisk.

Add baking soda and cinnamon to the flour. Sift the flour and add it to the dough in portions. You may need less or more flour, depending on the desired consistency of the dough. Read about the properties of flour and soda in separate articles at the end of this recipe.

Mix with a whisk or mixer. The dough should be smooth and tender. In terms of thickness, it will resemble pancake dough, so if your jam is runny, you may need to add another 50-80 g of flour.

Transfer the dough into the mold. For baking, you can use any suitable form, it is advisable that its diameter is about 24 cm at least so that the level of the dough is not too high. I used a cake pan for baking, its diameter is about 23 cm. Pre-grease the pan with butter or line it with baking paper.

Bake the gingerbread at 170-180 C for about 45 minutes. The times are approximate and will depend on the height of the cake and the operating conditions of your oven. Let the finished cake cool in the pan for 10 minutes, then transfer it to a wire rack and let the cake cool completely.
