Kefir 200 ml
Vegetable oil 150 ml
Eggs 3 pc

How to make jellied pie with plums using kefir? The recipe is very simple, and the result is wonderful. To begin, prepare all the necessary ingredients according to the list. Take the highest grade flour. Kefir 3.2% fat. It is advisable to use refined, odorless sunflower oil, because olive oil can add unnecessary bitterness to the pie. Large, selected eggs are needed. If the eggs are small, use one more.

First, prepare the plums. Wash them, cut them in half and remove the seeds. Then you can leave the plums in the form of halves, like I did, or cut them into thinner slices. Now decide for yourself which one you like best. The variety of plums can be very different, from red plums, like mine, to prunes. The main thing is that they are dense enough and do not spread when baking.

Now prepare the dough. Combine chicken eggs with sugar and vanilla sugar and beat with a mixer until fluffy. The mass should increase in size by 3-4 times and lighten.

Pour in room temperature kefir and sunflower oil. Whisk everything again. The mass will liquefy greatly, but that’s how it should be.

Sift the flour and add it into the dough in parts, stirring the mixture with a mixer at low speed or with a whisk until smooth. You may need more or less flour depending on the size of the eggs, the moisture content of the kefir and the quality of the flour itself. Therefore, focus on consistency: the dough should be thick, but fluid.

At the very end, add baking powder and mix the dough again.

Place the dough in a pan lined with parchment and greased with butter (mine is 24 cm in diameter). Place plums on top. Bake the pie in a preheated oven for 40-45 minutes at 180°C. The surface of the pie will rise and brown slightly. Determine the exact baking time and temperature based on your oven.

Remove the finished pie from the mold, sprinkle with powdered sugar if desired, cut into pieces and serve. Bon appetit!
