How to make cheesecake with banana and cottage cheese with baking? First, prepare the necessary ingredients. Start cooking with the crust. You can make the cheesecake crust regular light or chocolate. In this case, replace regular cookies with chocolate ones.

Grind the shortbread cookies into crumbs. This can be done in the bowl of a stationary blender or by placing the cookies in a thick plastic bag and rolling them thoroughly with a rolling pin. I used a blender.

Add soft butter to cookies and beat again until fine, moist crumbs are obtained.

Take a banana that is soft, not overripe, but not hard and greenish. The banana skin should be a rich yellow color without black spots.

In a bowl, combine cottage cheese, sugar, half the sour cream and eggs. Beat with an immersion blender until smooth.

In another bowl, combine the peeled bananas, broken into pieces, and the remaining sour cream. Blend until smooth.

Pour the banana mixture into the curd mixture, add cornstarch and vanillin and mix thoroughly with a whisk until smooth.

Wrap the bottom and sides of the mold with the base in 2-3 layers of foil.

Pour the banana-curd mixture onto the base. Place the pan on a deep baking sheet. Pour warm water into the pan until it reaches halfway up the sides of the pan. Bake the cheesecake for about 1.5 hours at 160-170℃. Leave the finished cheesecake in the turned off oven for another 30 minutes.
