Wheat flour 180 g

Vegetable oil 90 ml
Baking powder 10 g
Kefir 150 ml

How to make a simple quick pie in the oven? To begin, prepare all the necessary ingredients according to the list. Take the highest grade flour. Large, selected eggs are needed. If the eggs are small, take 4 pieces. All foods should be at room temperature, so remove them from the refrigerator in advance. Kefir is suitable for any fat content.

In a deep bowl, combine eggs, sugar, and salt and beat with a mixer until fluffy and light in color. The mass should increase in volume by 3-4 times. The airiness of your cake depends on how you beat the eggs. You can’t beat the mixture until it’s white and thick—the whites will lose the air bubbles that lift the dough. And in this case, even baking powder will not help. The dough will either not rise at all or rise weakly.

Pour in kefir, vegetable oil and lemon juice. Add lemon and orange zest (optional). Mix the mixture with a mixer at low speed. You can replace kefir with milk or natural yogurt.

Add the flour sifted with baking powder and mix the dough with a whisk until smooth.

The dough should be fluffy and airy. Many air bubbles should appear on the surface from the reaction of the acid with soda.

Line a baking pan (I have a square pan measuring 20x20 cm) with parchment and grease with vegetable oil. Pour the dough into it and smooth it out. Bake the pie in an oven preheated to 180°C for 30-35 minutes until the skewer comes out dry. It is better not to open the oven door during baking so that the cake does not fall off.
