Cinnamon Plum Jam Cake with Sour Cream and Kefir

Is there any leftover jam from last year? Bake it into a cake! Very often there is last year’s jam left over and, in my opinion, the best option to use it is to bake a delicious gingerbread from it! I have plum jam in my recipe, and besides, the taste of plum is decorated with cinnamon. Gingerbread is the best treat!

Ingredients (12 portions)

Basic:

Salt 0.25 tsp
Sugar (sweeter lovers can do more) 100 g
Wheat flour 300 g
Vanillin to taste
Eggs 2 pc
Sour cream 100 g
Vegetable oil 4 tbsp
Soda (quench with lemon juice or vinegar) 0.5 tsp
Jam (plum or any other, then omit the cinnamon) 1 cup
Kefir 100 ml
Ground cinnamon (You can either less or more to your taste) 0.5 tsp

Prepare the products according to the list. Remove kefir and eggs from the refrigerator in advance so that they warm up to room temperature. Take the highest grade flour. White sugar can be replaced with cane sugar. It will give baked goods an interesting caramel aroma and taste.

Pour kefir, sour cream and eggs into a bowl. Place the jam in a blender bowl and blend until smooth. I used plum jam, but you can use whatever you have. Add it to the kefir mixture. Add sugar or sweetener, vanilla on the tip of a knife or vanilla sugar (about 1 tablespoon), ground cinnamon. The amount of sugar can be reduced or increased. You can also add a little less ground cinnamon, more, or don’t add it at all if you don’t like it.

Mix all ingredients and beat lightly with a whisk. Add soda slaked with lemon juice or 3% vinegar.

Be sure to sift the flour. Add it to the liquid ingredients and mix the mixture thoroughly. You should get a smooth, homogeneous dough, the consistency of thick sour cream.

Lightly grease a heatproof dish with vegetable oil. Pour out the dough and smooth the surface with a silicone spatula. Place in an oven preheated to 180 degrees. Bake for approximately 45-50 minutes.

Once the gingerbread is baked and well browned, check for doneness with a wooden skewer. Remove the finished pie from the oven and cool. Remove the cooled gingerbread from the mold, transfer to a plate, and cut into portions. If desired, sprinkle with powdered sugar, decorate with grated dark chocolate, walnuts or any other chopped nuts, and coconut. Now invite all your loved ones for tea with a fragrant gingerbread of amazing taste!
