Instead of pollock, you can take any fish, you can even use river fish, it will turn out even tastier, but you will have to tinker with it to remove all the small bones. Take sour cream with a high percentage of fat content, it will turn out tastier.

Clean the fish, gut it and boil it in salted water with bay leaf and peppercorns for 20 minutes. Cool the fish, separate the flesh from the bones and cut into small pieces.
