Cherry Plum Oatmeal Pie

Crumbly dough and cherry plum are a beautiful and tasty combination. I have long wanted to bake a pie with such a beautiful top of quartered plums. But I didn’t get around to plums, because the other day I saw a cheap, almost free, red cherry plum. This is the second year we won’t have a cherry plum harvest, so we have to buy it.

Ingredients (6 portions)

Dough:

Salt 2 g
Wheat flour 90 g
Butter 75 g
Brown sugar 40 g
Ground cinnamon 0.5 tsp
Oat flour 50 g

Filling:

Brown sugar 1 tbsp
Cherry plum 200 g

Dough. To prepare the pie dough we will need: wheat flour, oat flour, butter, brown sugar (can be replaced with regular sugar), cinnamon and salt. You will learn all the intricacies of making shortcrust pastry from the article at the end of the recipe.

Cut the cold butter into cubes.

Place wheat and oat flour, pieces of butter, cane sugar, cinnamon and salt into the bowl of a blender or food processor with a knife attachment. Beat everything into fine crumbs. Pour the resulting crumbs into a bowl and place in the refrigerator.

Filling. To prepare the pie filling we will need: cherry plum and brown sugar.

Wash the cherry plum and dry it. It is better to choose dense, but not green fruits, so that during baking they retain their shape and do not spread out. The same applies to plums, if you decide to replace cherry plums with them.

Cut the cherry plum in half and remove the seeds. Cut each half into two more pieces.

Place all the shortbread crumbs in a baking pan lined with parchment (I have a square 25×25 cm, but you can take a larger one) and smooth it out.

Place cherry plum quarters on top. Sprinkle it evenly with 1 tbsp. l. cane sugar.
