Baked Zucchini and Chicken Foil Packets

A very tasty and healthy dish, treat yourself and your friends! From the many recipes for cooking zucchini, I decided to try baking them in foil. I looked through several recipes, chose where I just needed to cut them, and then lay out a layer of chopped meat, sprinkle with grated cheese and bake in foil. But for some reason my soul wanted more beauty and on a grand scale, so other ingredients were used. The recipe is simple — we make large zucchini sandwiches, put vegetables on them, like on pizza, and bake them. Since I wanted to fill the remaining space with potatoes, I also added tomato paste and dill to it, but you can do without it. This makes a delicious vegetable casserole with zucchini and chicken fillet.

Ingredients (6 portions)

Basic:

Tomatoes 2 pc
Salt to taste
Potato 3 pc
Hard cheese 200 g
Tomato paste 1 tbsp
Zucchini 2 pc
Bulb onions 1 pc
Dry spices to taste
bell pepper 3 pc
Dill 1 g
Chicken fillet 300 g
Melted butter 1 tbsp
Sesame 1 tbsp

Cut enough foil to line the bottom of the baking sheet and then cover the zucchini loosely.

Wash the zucchini and remove the skin. Cut the zucchini in half lengthwise. Place on a baking sheet, sprinkle with salt and spices.

Finely chop the chicken fillet.

Place the chicken fillet evenly on the zucchini and sprinkle with salt.

The next layer is chopped onions. Can be cut into rings or half rings.

Then lay out the sweet pepper, cut into strips.

Slice the tomatoes 0.5 cm thick and cut them in half. Spread the tomatoes in a thick layer. At this stage you also need to add salt.

Grate the hard cheese on a coarse grater and distribute it evenly over the layer of tomatoes. Sprinkle sesame seeds on top. At this stage you can already put it in the oven.

But I decided to fill the remaining spaces on the baking sheet with potatoes. Cut the potatoes into slices, add salt, add tomato paste, chopped onions and dill. Mix well in a plate.

We place the potatoes in the spaces between the zucchini, and also distribute pieces of melted butter throughout the baking sheet onto the potatoes. Although the vegetables should be baked under foil in their own juices, I added water for the potatoes, as they may turn out a little dry.

Cover with foil, but do not press it onto the zucchini on top, as the cheese will melt and stick to the foil. Place in an oven preheated to 200 degrees for about 40-60 minutes. Check the readiness by checking the potatoes; out of all the vegetables, they took the longest to bake for me.

Carefully remove the foil; if the cheese is stuck to it, carefully remove it.

Zucchini baked in foil in the oven is ready! Carefully move them onto the platter and call everyone to the table.
