Festive Baked Chicken in Red Wine Marinade

The dish exudes a festive mood! A traditional dish at many holidays is baked chicken with potatoes. It can be diversified and made unusually tasty if you first marinate the bird in a fragrant wine-soy marinade. The result is a real holiday dish — chicken in red wine in the oven!

Basic:

Onion 2 pc
Garlic 5 clove
Salt to taste
Oranges 1 pc
Potato 600 g
Rosemary 10 g
Chicken thighs 1 kg

Marinade:

Garlic 2 clove
Salt to taste
Ground black pepper to taste
Nutmeg 0.5 tsp
Honey 1 tbsp
Maggi seasoning 1 tbsp
Vegetable oil 30 ml
Red wine 200 ml
Soy sauce 50 ml

How to make chicken in wine? First, prepare the marinade. If you use ready-made spice mixtures, be sure to read the ingredients on the package. Often such mixtures already contain salt and pepper, take this into account, otherwise you risk oversalting and peppering the dish.

In a bowl, combine soy sauce, vegetable oil, liquid honey, pressed garlic, chicken seasoning, nutmeg, salt and pepper to taste. Pour red wine over everything and stir.

Now prepare the main ingredients. In addition to chicken thighs, you can use any part of the chicken: drumsticks, fillets, wings. Wash the garlic cloves, dry them and leave them whole without peeling them.

Wash the chicken thighs (or other parts of the chicken), dry them, and cut in half if necessary.

Pour the wine marinade over the chicken, making sure to cover most of the chicken with liquid.

Let the chicken marinate for one hour at room temperature, or preferably 8-24 hours in the refrigerator. If you marinate in the refrigerator, cover the bowl with the chicken with cling film.

Peel the potatoes and cut into large cubes.

Cut the orange into slices.

Cut the red onion into slices too.

Place the potatoes in an even layer in a baking dish and lightly salt them.

Remove the chicken thighs from the marinade and place skin-side up on top of the potatoes.

Place orange slices, red onion, rosemary or thyme sprigs and whole garlic cloves between the chicken pieces. If you donʼt have fresh rosemary and thyme, dried herbs will do.

Cover the pan with foil or a lid and place the chicken in an oven preheated to 180°C for about 1.5 hours. Determine the exact baking time and temperature based on your oven.

10 minutes before the end of baking, remove the foil and brush the surface of the chicken and onions with a thin layer of liquid honey. Return the chicken to the oven and broil until golden brown and crispy. Bon appetit!
