Perfect Sunday Omelet

I “made it” out of what I had... And it turned out delicious! I was in a good mood, I looked in the refrigerator... The result. It turned out very tasty! This omelet is perfect for Sunday breakfast!

Ingredients (6 portions)

Basic:

Garlic 3 clove
Tomatoes 1 pc
Olive oil 5 tbsp
Salt to taste
Ground hot pepper to taste
Potato 3 pc
bell pepper (red and yellow half a pod) 1 pc
Chicken eggs 4 pc
Cream (10%) 100 ml
Pork belly (I had my own baked brisket, you can replace it with ham, bacon or boiled smoked brisket) 150 g

Recipe instructions

Finely chop the garlic. Cut the red onion into strips.

Cut sweet peppers into cubes.

Cut brisket, ham or bacon into cubes. (I had homemade baked brisket).

Cut the tomato into slices.

Finely chop the green onions.

Cut the potatoes into thin slices and fry in olive oil for 5 minutes.

Add the remaining ingredients to the potatoes.

Continue frying for 5-7 minutes. Salt and pepper to taste. Transfer to a baking dish greased with olive oil.

Beat eggs with cream, salt and pepper, mix with chopped green onions.

Pour this mixture over the vegetables and brisket.

Bake in a preheated oven at 180 degrees for 30 minutes.
