How to bake whole jacket potatoes in the oven? Prepare the necessary ingredients. For baking, you need to choose the right potatoes, because there are varieties that will remain raw inside even after an hour in the oven. Focus on the color of the pulp: the lighter it is, the more starch it contains and the faster the potatoes will cook. You can replace dried thyme and rosemary with fresh sprigs. The dish will only benefit from this, since the aroma of fresh herbs is stronger

Wash the potatoes thoroughly and scrub with a brush. If the potatoes are young, be careful not to remove the outer, tender skin. If the potatoes are from an old harvest, it is better to pierce them on all sides with a fork or toothpick. Turn on the oven to 200 degrees.

Peel the garlic and cut lengthwise into 2-3 pieces to form petals.

Place the potatoes in a baking dish or on a small baking sheet. Drizzle olive oil on top. Place the potatoes in an oven preheated to 200°C for 20 minutes. If you have dense potatoes with a hard crust, it is better to cover the pan with foil. This way it will bake faster inside. After 20 minutes, remove the potatoes and pierce each tuber with a toothpick. The top should be soft, but the middle should remain elastic.

Turn the tubers over. Using a brush, brush the tubers with olive oil from the bottom of the pan. Top the potatoes with sea salt and dried herbs. Place garlic and bay leaves around the potatoes. Return the potatoes to the oven and bake for about 20-25 minutes until tender. If the potatoes are not baking well, cover the pan with foil.
