Basic:

Chicken 1.5 kg
Potato 800 g
Onion 1 pc

Sauce:

Mayonnaise 120 g
Curry 1 tbsp
Paprika 1 tbsp
Ground black pepper to taste
Salt to taste

How to bake a whole chicken with crispy potatoes? Prepare all ingredients. Letʼs start with the sauce in which the chicken will be marinated.

In a bowl, combine mayonnaise, paprika, curry, salt and pepper.

Mix thoroughly until smooth. The sauce is ready.

Next, take the chicken, wash it thoroughly, and dry it with paper towels. I recommend using chilled poultry, but if you have a frozen product, then slowly defrost it by transferring it from the freezer to the refrigerator. This way the meat will be practically undamaged and will retain its juiciness.

Coat the chicken with the resulting mayonnaise mixture, reserving a little sauce for mixing with the potatoes. Leave the chicken to marinate for 30 minutes (it can be longer if time allows, but in half an hour the meat will be sufficiently soaked).

Wash the potatoes with a brush, peel and cut into large slices. Peel the onion and cut into rings or whatever you like. To avoid eye irritation, rinse the onion and knife with cold water before slicing.

Place the potatoes in the bowl with the remaining sauce and toss to combine.

Place onions in the bottom of the baking dish.

Place potato slices on top.

Place the chicken carcass on the potatoes. Cover the pan with foil and place in a preheated (10-15 minutes before) oven at 180°C for 50 minutes. Then remove the foil and bake for about 30 minutes until golden brown. Adjust the temperature and time according to the characteristics of your equipment.
