Recipe instructions

Step 1

Step 1
How to bake potatoes with bacon in the oven? Prepare the necessary ingredients. For this dish you need young potatoes, not very large, but not small, even, with a small number of eyes and approximately the same size. The Red Scarlet variety with red skin and yellow flesh is well suited for baking. It bakes quickly enough and does not fall apart. It is better to buy smoked bacon or raw meat sliced. You will need about 6 thin strips.

Step 2

Step 2
Wash the potatoes, dry and peel, trying to keep the tubers as even as possible.

Step 3

Step 3
Pat each potato dry with paper towels to remove excess moisture.

Step 4

Step 4
Salt the tubers, pepper on all sides, sprinkle with Italian herbs (I used a grinder) or ready-made spices suitable for potatoes.

Step 5

Step 5
Wrap each potato with a strip of bacon. Place the potatoes in a baking dish that can be lightly greased with vegetable oil with a high smoke point.

Step 6

Step 6
Place the pan in an oven preheated to 200 degrees and bake for about 40 minutes. Check readiness with a wooden skewer. If the potatoes are not cooked through and the bacon is well browned, cover the pan with foil. You can serve potatoes with fresh vegetables. Or prepare the sauce: 3 tbsp. l. combine sour cream with 1 tbsp. l. olive oil, 1 tbsp. l. lemon juice and 1 tsp. grainy mustard. Stir or blend in a blender for a more uniform consistency.
