Wash the new potatoes thoroughly with a sponge or brush, then rinse under running water and dry with a kitchen towel or paper napkins. To ensure that the potatoes bake evenly in the oven, it is better to choose tubers of the same size. Cut each potato into 4 wedges.

How to make sauce for new potatoes with skins? Wash the tomato under running water, cut into two parts. Grate each half on a coarse grater. Throw away the skin.

Add a pinch of salt, olive oil, dried basil or oregano, some ground pepper and dry garlic to the tomato. Mix everything very well. At this stage, you can add your favorite seasonings and spices; adjust their quantity to your taste. The sauce is ready.

Dip each potato wedge in tomato sauce. Or, for convenience, you can put the potatoes in a plastic bag, add tomato sauce, and then mix everything in the bag, moving it from one hand to the other. Potatoes should not be left to marinate; they should be cooked immediately.

Line a baking tray with baking paper or grease it well with vegetable oil using a silicone brush. Place the potato wedges on the side, cut side down, so that the fragrant skin is on top (as in the photo).

Cover the baking sheet with foil and place the potatoes in the preheated oven. Bake at a temperature of 180-200 degrees, “top-bottom” mode for about 20 minutes.
