How to cook pumpkin stew? Prepare the necessary ingredients. Beef is needed in the form of boneless pulp. Veal is also suitable. You can use any kind of pumpkin, the main thing is that it is not very loose at first, otherwise the pieces will quickly boil and instead of a stew you will end up with pumpkin puree with pieces of meat. You can add the onion whole and then discard it or cut it into small cubes.

Wash the beef, dry it and cut into medium pieces.

Wash the tomato and cut into semicircles. Choose tomatoes that are juicy but firm. Soft fruits do not hold their shape well; during cutting and cooking, they will spread into a shapeless mass and spoil the appearance of the dish.

Peel the pumpkin and cut into small cubes.

Peel the carrots and cut into semicircles. If the carrots are large in diameter, you can cut them into quarters.

Peel the potatoes and cut into medium pieces. It’s also better to choose potatoes that retain their shape and don’t get soggy from stewing for a long time. The flesh of such potatoes should be yellowish. If the flesh is white, it means there is a lot of starch in such potatoes and the potatoes will boil quickly. The yellower and denser the tubers, the less starch they contain.

Peel the garlic and finely chop it or pass the cloves through a press.

Place tomato paste in water, add barbecue seasonings, salt and pepper. Stir everything thoroughly until smooth. You can replace water and tomato paste with ready-made tomato juice, but it’s better not to add salt to it right away, but first taste the juice and then add more salt if necessary. You can choose a set of spices yourself: I use curry, ground paprika, dried paprika pieces, dried rosemary and thyme, salt, pepper.

Heat vegetable oil in a frying pan. Add the beef and fry over high heat until golden brown. If you want to add chopped onion, add it to the meat and fry, stirring, together for 2 minutes.

Add the prepared vegetables to the meat and fry everything together, stirring, for about 10 minutes.

Place the whole onion in the pan, if you did not add it chopped before. Pour in the tomato paste and spices diluted in water. Add chopped garlic.

Mix everything thoroughly, bring to a boil and simmer, covered, for 25-30 minutes over low heat at a low simmer. Place the finished stew on plates and sprinkle with chopped herbs. Bon appetit!
