How to fry potatoes and zucchini in a frying pan? Prepare the necessary ingredients. It is advisable to choose special varieties of potatoes suitable for frying. Young zucchini, with small seeds and tender flesh, are best suited.

Wash the zucchini thoroughly and dry. If the vegetables are large, cut them into quarters, if small — into semicircles.

Wash the potatoes, peel them and cut into medium cubes.

Wash the thyme, dry it and peel the leaves from the branches.

Heat the vegetable oil in a frying pan, place the potatoes on it and fry them for about 15 minutes, stirring occasionally. During this time, the potatoes should brown on all sides.

Add the zucchini to the pan with the potatoes. Fry everything together for about 10 minutes, stirring occasionally.

When the zucchini releases its juice, salt and pepper the vegetables and sprinkle with thyme leaves. Fry for another 5-7 minutes. Instead of frying potatoes and zucchini, you can simmer them by adding 200 ml of water to the pan. This will make the dish less caloric.

At the very end, add a piece of butter to the pan. It is not necessary to add oil if you see that the vegetables are already heavily saturated with fat and there is still vegetable oil left at the bottom of the pan. Cover the pan with a lid and cook for another 3-5 minutes.
