Asian Chicken Mushroom Noodle Soup

Fragrant, satisfying — for lovers of Asian cuisine! The soup with funchose, chicken and mushrooms is thick, tart and very tasty! The fairly familiar combination of chicken and mushrooms is enlivened by the addition of teriyaki sauce and sprouted grains. Any mushroom will do, from shiitake to champignons.

Ingredients (4 portions)

Basic:

Onion 1 pc
Garlic 2 clove
Salt to taste
Carrot 1 pc
Vegetable oil 1 tbsp
Mushrooms (shiitake, oyster mushrooms or champignons) 300 g
Greenery to taste
Chicken thighs 4 pc
Funchoza 100 g
Teriyaki sauce 2 tbsp
Sprouted mung bean (can be replaced with any other sprouted legumes) 50 g

How to cook chicken soup with funchose and mushrooms? Prepare your food. You can take any parts of the chicken, either with or without bones. Any mushrooms are also suitable — shiitake, champignons, oyster mushrooms, wild mushrooms, frozen or fresh. You can use one type of mushroom or several. Itʼs very easy to sprout beans at home. At the end of the recipe you will find a link on how to do this.

Peel the onion and cut into cubes.

Cut the carrots into thin strips. Or grate on a coarse grater or for Korean carrots.

Finely chop the garlic.

Wash and dry the mushrooms. Cut them into large pieces. I have oyster mushrooms, I left the very small ones as is, and cut the large ones into several pieces.

Wash the chicken and dry well. Take a saucepan with a thick bottom. Read about the intricacies of choosing a vessel for cooking soup at the end of the recipe. Place the pan over medium heat. Pour vegetable oil into it for frying. Place chicken pieces in hot oil. Fry it until golden brown on both sides. To avoid splashes, cover the pan with a lid. Then add the chopped vegetables to the chicken and fry everything together for a couple of minutes, stirring.

Place the mushrooms in the pan. Fill the contents with hot water. Wait for it to boil. Reduce heat, cover the pan and leave to simmer for 30 minutes. Or another time, depending on the parts of the chicken.

At the end of cooking, add teriyaki sauce, bean sprouts and salt to taste to the soup (stir first and taste after adding the sauce). Boil everything together for one minute. The soup is ready.

Pour boiling water over funchoza for 7-10 minutes.

Place a piece of chicken on a plate and pour in the soup. Add a portion of funchose. For ease of adding, cut the noodles with scissors. Sprinkle the soup with herbs to taste.
