How to cook green borscht with nettles and eggs? Prepare the necessary products. Use young nettles with tender, juicy leaves. Any part of the chicken is suitable for the broth. I have breast fillet. Take unscented vegetable oil.

Step 2

Step 2
Pour water into a saucepan of suitable volume. Wash the chicken, place it in a saucepan, and bring to a boil. Skim off the foam that forms. Add peppercorns, bay leaves, salt to the pan and cook the chicken over moderate heat for about 30 minutes until tender. How to choose the right saucepan for soup, read the article at the link at the end of the recipe.

Step 3

Wash the pre-peeled carrots and grate them on a coarse grater.

Step 4

Step 4
Peel the onions, wash them, cut them into small cubes.

Step 5

Step 5
In a frying pan with vegetable oil, fry the onions and carrots, stirring occasionally. The vegetables should become soft. How to choose a frying pan and oil for frying, read in separate articles, links can be found at the end of this recipe.

Step 6

Step 6
Wash the nettles. To avoid getting burned by nettles, you can wear gloves or dip the herb in boiling water. Finely chop the nettle.

Step 7

Step 7
Peel the potatoes, wash them, cut them into small cubes.

Step 8

Step 8
Remove the finished chicken from the broth, remove the bay leaf. Turn up the heat and place the prepared potatoes into the pan. Bring to a boil, then reduce heat. Cook the potatoes in the broth at a moderate boil until almost done.

Step 9

Step 9
Place the nettles in the pan and stir. Boil the nettles for about 5 minutes.

Step 10

Step 10
Add fried vegetables to the soup and stir.

Step 11

Step 12

Step 12
Place the chicken in the soup and stir. Add salt if necessary.

Step 13

Step 13
Cook the soup at a low simmer for another 1-2 minutes. Peeled boiled eggs can be cut into cubes and added to the soup at the end of cooking. You can also add a raw beaten egg at the end of cooking, while stirring the soup in a circular motion. Or serve a portion of borscht with half a boiled egg. Turn off the stove and let the borscht brew with the lid closed for 5-10 minutes.

Step 14

Step 14
Serve green borscht with nettles and a boiled egg with sour cream. Bon appetit!
