Hearty Bean and Minced Meat Soup

Excellent bean soup with a dressing of minced meat and vegetables. The soup is very tasty, and despite the fact that it takes a long time to prepare due to the beans, it is quite easy to cook. To reduce the time it takes to prepare soup, you can use fresh young beans during the season or use canned ones.

Basic:

Garlic 3 clove
Tomatoes 200 g
Salt 1 tbsp
Water 2.5 l
Bay leaf 1 pc
Carrot 150 g
Bulb onions 150 g
Minced meat (assorted minced meat or 2 types of minced meat) 400 g
bell pepper 1 pc

To make the soup with beans and minced meat especially tasty, we take two types of meat — chicken and beef. This is the meat from which we will prepare minced meat ourselves. We will also need vegetables — onions, carrots, sweet peppers, tomatoes, herbs. Letʼs take dry beans, the soup from them turns out more satisfying. For frying we use sunflower oil. And for aroma — garlic, bay leaf and dill.

Be sure to soak the beans in cold water for at least an hour. Then drain the water and wash the beans.

Fill the beans with water again and set to cook. Cooking time is 2 hours on oil fire from the moment of boiling. During this time, almost all the water will boil away. You can boil the beans ahead of time.

While the beans are cooking, prepare the minced meat — grind the meat in a meat grinder, preferably twice.

We also prepare vegetables, wash and peel them.

While the water is boiling in the soup pot, cut the onion and bell pepper into small cubes.

We also cut the carrots into small cubes.

First pour the chopped carrots into the boiling water.

Place the minced meat in sunflower oil heated in a frying pan and begin to fry over high heat, kneading and stirring until it becomes crumbly. Fry the minced meat for 3 minutes.

Then add chopped onion and pepper, half a tablespoon of salt to the minced meat and continue to fry over medium heat, stirring, in an open frying pan.
