How to cook chicken soup with noodles and potatoes? Prepare all products. Letʼs start by cooking the broth. I took a soup set for this, but you can use any other parts of the chicken. Rinse the chicken well, place in a saucepan, cover with cold, high-quality, filtered water and put on fire. When the water boils, reduce the heat, remove the scum and cook over medium heat, without letting the broth boil too much, for 15-20 minutes. Do not cover the pan with a lid.

Peel the onion. Wash the carrots with a brush and peel them. Cut the vegetables into small cubes and add to the broth being prepared. Add half a tablespoon of salt. At the end of cooking the chicken soup, you can add salt to the dish to your liking. Cook the chicken and vegetables for 20 minutes over low heat, avoiding boiling.

Wash the potatoes with a brush under running water, peel them, cut into small cubes and add to the soup. Cook for another 15-20 minutes after boiling.

Add vermicelli to the soup, salt and pepper to taste. Add bay leaf if desired. Keep the soup on the fire for 2 minutes and turn off the heat. If you want, add spices to taste. Instead of vermicelli, you can use other pasta. If the soup is being prepared for children, then there is no need to add black pepper and other spices.

Let the finished chicken soup with noodles and potatoes sit under the lid for at least 10 minutes. Then pour it into portioned plates and serve. Add fresh chopped herbs (parsley, dill or green onions) to taste. Bon appetit!
