How to cook green bean soup? Prepare your ingredients. The soup can be cooked either in broth, meat or chicken, or in water. I took chicken broth. Green beans can be used fresh or frozen. Choose a set of vegetables depending on availability and season.

Do not defrost frozen beans first, just run hot water over them. You can pour boiling water over the beans in a bowl for a minute, then drain the water. Or place the beans in a colander and pour boiling water over the sink.

Wash the potatoes, peel and cut into strips. Grate clean and peeled carrots.

Peel the onions and finely chop with a knife.

Wash the bell peppers and young zucchini, remove the core and seeds from the pepper, then cut into cubes or strips.

I had diced frozen bell peppers and zucchini.

Place potatoes, carrots and onions in a saucepan, pour clean water (I used chicken broth). Place the pan over medium heat. Wait for the water to boil, reduce the heat and cook the vegetables for 7 minutes.

Next, add the green beans and simmer the soup for another five minutes.

Then add the zucchini and bell peppers, salt to taste and continue to simmer the soup over low heat for 5-7 minutes. The potatoes should be soft, you can check with the sharp tip of a knife. Turn off the heat. Let the soup stand covered for 15 minutes and serve, poured into plates, with sour cream and fresh herbs. Bon appetit!
