Ingredients (4 portions)

For the soup:

Onion 1 pc
Salt 1 tsp

Chicken thighs 500 g

Salt to taste
Wheat flour 3 tbsp
Bouillon 2 tbsp

How to cook chicken and dumpling soup like in kindergarten? Prepare the indicated products. Chicken broth soup, for this I use chicken thighs, you can also use other parts of the chicken, the main thing is that they have meat on them. Vegetables are medium in size; you will need a little vegetable oil to sauté them. To prepare the soup, you can take your favorite dry spices and herbs.

Rinse chicken thighs with cold water, place in a saucepan and fill with cold water (2.5 — 3 liters). Place the pan over high heat, wait until the broth boils and reduce the heat to less than medium. Skim off any foam that has formed and cover the pan with a lid. How to choose a pan, read below the steps. When the meat is cooked, remove it from the broth into a separate bowl. If desired, the broth can be strained through a sieve for greater transparency.

Wash, peel and cut the potatoes into cubes (or as desired). Add the potatoes to the pan, increase the heat slightly and bring the soup to a boil.

Peel and wash the carrots and onions. Finely chop the onion and grate the carrots on a coarse grater. Heat a little vegetable oil in a frying pan and fry the onions and carrots for a few minutes. Add the fried vegetables to the soup and continue to simmer, covered, over medium heat for 10 — 15 minutes.

In a deep bowl, mix the broken raw egg with salt. Add flour and broth from the soup being prepared. Mix the mixture thoroughly. It turns out a little thicker than on pancakes. Take two spoons (the size of the dumplings will depend on the size of the spoons) and soak them in water. Take the finished dough with a spoon in small portions, using another spoon, remove it directly into the hot broth. Do this with the entire dough. Stir the soup carefully so that the dumplings do not stick together. Add salt and ground black pepper to the soup.

After a few minutes, when the dumplings float to the surface of the soup, add chopped pure dill to it, stir and turn off the heat.

Let the finished soup sit for about ten minutes before serving. Serve the soup hot, adding meat from the broth, soup and fresh herbs (if desired) to each serving plate.
