Sauerkraut and Sausage Stew

This wonderful simple and inexpensive dish is available to everyone. If you don’t have a cauldron, you can stew the cabbage in a saucepan or frying pan.

Ingredients (4 portions)

Basic:

Onion 1 pc
Garlic (1 head) 50 g
Salt to taste
Sugar (pinch) 0.2 g
Ground black pepper to taste
Bay leaf (2-3 pcs.) 2 pc
Tomato paste 2 tbsp
Carrot (if there is not enough of it in the cabbage) 1 pc
Vegetable oil 2 tbsp
Sausages 300 g
Sauerkraut 500 g

How to make stewed sauerkraut with sausages? To begin, prepare the necessary ingredients according to the list. You can use store-bought or homemade cabbage.

If you don’t have enough carrots in your cabbage, then add one fresh carrot to the recipe. Grate it on a coarse grater and combine with cabbage. I have homemade cabbage with a lot of carrots. Therefore, no additional carrots were needed.

Peel the sausages from the factory film and cut into circles. You can use any sausage for this dish. But it is worth considering that they can greatly affect the final taste of the dish. For example, if you take sausages with a pronounced smoked taste, then the whole dish will also have a slight smoked taste. If you want a neutral flavor, use regular sausages, such as milk or butter.

Peel the onion and cut into half rings.

Add sauerkraut and simmer, stirring constantly, for another 3-5 minutes.

Add tomato paste, salt, sugar and ground pepper to the cabbage. Mix everything and fry everything together for about 2 minutes. Tomato paste in this recipe can be replaced with crushed tomatoes in their own juice or tomato ketchup.

Pour hot water into the cauldron so that it completely covers the vegetables. Add bay leaves. Stick a head of garlic, peeled from excess husk, into the center. Simmer the cabbage over low heat until excess moisture boils away.
