Tomatoes 2 pc

Broccoli 100 g
Zucchini 200 g
Carrot 1 pc
Bulb onions 1 pc
Vegetable oil 2 tbsp
bell pepper 1 pc
Eggplant 1 pc
Chicken 500 g
Soy sauce 4 tbsp

How to make chicken with vegetables in soy sauce? Prepare all the necessary ingredients. If the dish is being prepared for a large family, you can use a whole chicken. For a small dish, you can take only chicken fillet. Wash the meat thoroughly under running water, dry with a paper towel and cut into small pieces. Place the chicken in a bowl and pour two tablespoons of soy sauce over it. Stir and leave to marinate for half an hour.

Take onions, peel and cut into small cubes or strips. I took red onion, but you can use regular onion.

Take the carrots, wash with a brush under running water, dry, peel and grate on a medium grater or a Korean salad grater.

Wash the eggplants, cut off the stems, cut into strips, place them in a bowl, sprinkle with salt, rub with your hands and leave to stand for 15 minutes. After the specified time, squeeze the juice from the vegetables.

Wash the bell pepper under running water, dry it, cut off the stalk and seed pod. Cut the pepper pulp into cubes or strips. Wash the broccoli, dry it and divide it into florets.

Wash the zucchini; if it already has a rough skin, remove it and cut out the core with the seeds. Cut the zucchini pulp into cubes.

Wash the tomatoes; if they have thick skin, remove it. To do this, make a cross-shaped cut and pour boiling water over the tomatoes, and then lower them into cold water. Cut the tomatoes into cubes or puree them in a blender.

Pour vegetable oil into a frying pan and heat it. Place cooked onions and carrots in the oil. Fry them until the carrots are soft.

Place the chicken fillet with the remaining soy sauce marinade into the pan with the vegetables.

Fry everything together, stirring with a spatula, over medium heat until the chicken meat turns white.

Then add eggplant and zucchini to the pan with the chicken, stir and fry them together for about 5 minutes. Then add the cooked bell peppers, tomatoes and broccoli to the pan, stir thoroughly and continue to fry for another five minutes.

Pour a couple of tablespoons of soy sauce into the pan, add a pinch of ground black pepper, stir and test the dish to see if there is enough salt. Soy sauce is quite salty, so just adding it is enough. Turn off the heat.
