How to make stewed cabbage with pork? Prepare the necessary ingredients. You will need winter white cabbage. It is prepared with fatty meats or poultry — pork, goose, duck. Therefore, it is better to choose fattier meat. If you are cooking with pork, I recommend using brisket with fatty layers or pork neck. Instead of tomatoes, you can take 1 tbsp. l. tomato paste.

Rinse the pork well under cold running water and pat dry with paper towels. Remove any skin if present; it will not be needed in this dish. Cut the meat into small pieces.

It is better to simmer the dish in a pan with thick walls or a cauldron. Pour in some oil with a high smoke point and heat it up. Place the pork pieces into the pan. Fry the meat on all sides over high heat, remembering to stir constantly. Do not salt the meat, otherwise it will release juice and will not fry, but cook, which will lead to its dryness.

Wash and dry the vegetables. Peel the carrots and onions. Remove the skin from the tomatoes, if desired. To do this, cut the tomatoes crosswise and place them in boiling water for a few seconds. Now remove the thin skin. Cut everything into equal small cubes. If desired, the carrots can be grated on a coarse grater.

Remove the top limp and darkened leaves from fresh cabbage. Cut the head of cabbage into two parts. Cut and discard the stalk. Finely chop the cabbage using a sharp knife or food processor.

Add onions and carrots to the pan with the meat. Sauté until the vegetables are soft, stirring to prevent them from burning. Finally, add salt and pepper to taste.

Add shredded cabbage.

Stir the contents and simmer, covered, over low heat until the cabbage is soft. This will take approximately 30 minutes. The exact time depends on the operating characteristics of your stove. Cook uncovered for the first 10 minutes, then cover the pan with a lid. If you close the pan immediately, the cabbage will be steamed, not stewed.

Lastly, add chopped tomatoes or tomato paste. During stewing, cabbage gives a sufficient amount of juice, but if you see that there is very little liquid, pour in a little boiled hot water (about 1-2 tbsp.). Stir the contents so that the cabbage does not burn. At the end, add a couple of bay leaves. Cook until cabbage is desired tenderness.

Serve the stewed cabbage with meat hot. Before serving, sprinkle with chopped parsley, green onions, and dill. Bon appetit!
