Fluffy Water-Based Yeast Pancakes

How to make fluffy lean pancakes with yeast in water without eggs? Prepare your food. The amount of flour and water is approximate; it may take more or less. You will look at the test. I use dry instant yeast. But in general, both regular dry and live ones will do. Only the dough proofing time will depend on the choice of yeast. Read about different types of yeast in a separate article at the link at the end of the recipe. If you wish, you can add raisins to the dough.

First of all, place the dough. In general, this is not necessary for instant yeast, since it is intended to be mixed with flour. But I’ll still show you how to do it, since you can cook with other types of yeast, and they require dough. At the same time, using a dough, you can check the quality of instant yeast, so that there are no surprises later.

Pour the yeast into a small bowl, add a little sugar from the total mass and a couple of tablespoons of flour from the total quantity. Pour in some warm water and stir to form a viscous paste. Cover the bowl with a towel and leave to rise for 10-15 minutes. During this time, the dough should increase in volume and bubble. If this does not happen, change the yeast. Please note that with other yeast the time for rising the dough may be longer.

Pour the dough into a bowl, add the remaining sugar, salt and flour. Adjust the amount of sugar and salt to your taste. If you are cooking with raisins, add them after soaking them in boiling water and then drying them. Pour in warm water little by little, kneading the dough well after each addition. The result should be a thick, homogeneous dough.

Cover the bowl with the dough with a towel or cling film and leave it on the counter for 30-40 minutes to rise. During this time, the dough will double in volume. I repeat that dough with other yeast may take longer to rise. After proofing, do not stir the dough.

Heat a pancake pan over high heat. Pour vegetable oil on it for frying. Also heat the oil well. Using two spoons, spoon the dough into the pan, forming pancakes. Fry them until golden brown on one side, then turn them over to the other. Adjust the heat so that the dough does not burn, but still has time to fry to the middle. Remove the finished pancakes from the pan onto a plate.
